Nineteen crimes turned convicts into colonists. Upon conviction British rogues guilty of a least one of the 19 crimes were sentenced to live in Australia, rather than death. As pioneers in a frontier penal colony, they forged a new country and new lives, brick by brick. This wine celebrates the rules they broke and the culture they built.

An opulent, oaky, buttery and toasty styled Chardonnay created with 100% oak barrel fermentation, 100% malolactic fermentation and oak aged in a mix of French and American oak.

Bay and Barnes leaned on our cousins across the ditch for the grapes to make this classic Australian Chardonnay. Following harvest, fruit was gently pressed before settling. Specially selected yeasts were used to start fermentation. From there the wine was delicately matured on oak and lees stirred to impart lovely toasty flavours and a creamy texture.

On the nose are aromas of roasted nuts, toasted brioche, subtle creaminess and a hint of smoke. This is a flavourful, multidimensional Chardonnay with a core of ripe stone fruit and fragrant citrus. The palate is supple and soft, with gentle acidity providing freshness and balance.

The palate is rich and creamy with grilled peaches, lemons and brioche through the mid palate. Fine, toasted oak and balanced acidity lead to a long and satisfying finish. The nose is bursting with melons, peach and ripe tropical and citrus fruits, followed by a generous fruit-driven palate. Classic Chardonnay roundness, giving a mouth-filling finish.
